15 days until my last name changes & a delicious recipe!

Well, wedding craziness has officially begun! I can't believe there's only 15 days left until I am married to the man of my dreams!!! Amongst the craziness, we decided we needed a date night out in nature to simmer down before the crazy really starts to come. I made my first dish in my brand new crock pot and it was a huge success!!! I'll leave the recipe below for this amazing black bean quinoa chili! I threw it together before work and packed up the crock pot when I got home and went straight to our picnic spot. We of course brought the doggies, and had such a romantic evening. Unfortunately we had to call it a short evening because the mosquitos were having a feast on us while we feasted on our vegan chili... but what can ya do. We played with the doggies, ate a lovely meal, and danced around in the scorching hot sun at one of our favourite places on Earth: Grandma's house. We're still trying to work out a way for us to buy her property but it comes with its fair share of difficulties. We would be so heartbroken to see it sold to someone else... but we shall see. Here comes the cheesie pictures ;)

  • 2 cups of veggie broth
  • 1/2 a cup of uncooked quinoa
  • 19 oz can of black beans
  • 10 oz can of tomato soup
  • 1/4 cup chopped red pepper
  • 1/4 cup chopped green pepper
  • 1 chopped celery stock
  • 1/2 a white onion
  • dash of cayenne pepper
  • ground pepper
  • salt

Simply mix together in order and turn on low to cook for 5-6 hours or on high for 2-3 hours. You can garnish with avocado chunks, green onion, shredded carrot, etc!
